Preparation
  1. Preheat oven to 350° F (175° C). Grease and flour a 9" x 5" loaf pan.
  2. Whisk first 5 ingredients in a large bowl.
  3. In another bowl, mix Toasted Onion with grated zucchini and allow to sit for at least 10 minutes.
  4. Stir melted butter, eggs, buttermilk and Parmesan cheese into flour mixture. Add zucchini mixture and stir to combine.
  5. Pour into prepared loaf pan and bake for 50 - 65 minutes.
